SUMMER MEMORIES, GOJI BERRIES & YOUR FAVORITE CHEF!

You guys! It's SUMMER! Like officially summer summer. The BEST time of the year. Why is it is it the best? Summer fruit, warmth & memories. Check out the fabulous summer meals HERE for next week!


Originally, I, Chef Ginny, am from Southern California, so a state of permanent summer is a perfectly wonderful way to exist. This opinion is further cemented into my psyche by the 4 brutal winters spent in Northern Minnesota when I was in middle school. It's even worse than it sounds...but let's focus on what's great about Minnesota--summer! Summer fruit! Every time I eat a raspberry I'm back in the middle of impossibly high raspberry bushes of the middle of the hot, humid summer picking baskets and baskets of the most amazing raspberries.


This year, I grew an outstanding crop of Goji Berries. They took years and years to get to a decent sized bush, and now the crop is aggressive and abundant. I didn't know what to do with so many of them, so I dug around and found that in China they make them into a tomato soup! Well, I didn't like the recipes online, so I made up my own with a smokey chipotle. Don't worry, it's not spicy at all and it's just a hint of smokiness & a hint of tang from the many, many goji berries. It is paired with a Chicken and Brie Garlic-Butter Grilled Cheese to make it irresistible. This has got the be the most healthy, antioxitant-rich tomato soup, ever! Chef Mary is sharing one of her favorite summer memories in the form of a big Summer Pot of Chicken and Sausage. Each year her family would have a fabulous 4th of July celebration and they would have a huge feast in a literal pot IN THE GROUND in Carmel Beach. The meal was prepared in layers and everyone had a wonderful, memorable party on the beach and then it was time for the feast that was buried in the sand. This feast has special salads and even s'more bites! Of course, we don't come and bury this in your yard--it will be on your porch in one of our insulated bags. We hope you have a memorable 4th of July or weekend celebrations planned! Since Mary's mother passed earlier this year, it is a special memory & meal she wishes to share with you. One of our goals with San Mateo Supper Club is to give you time to spend with your loved ones and on your own projects.
