SPRING BREAK & ONE MINUTE LENTIL SALAD RECIPE

It was such a glorious day today, I hardly believed the 100% chance of rain starting Tuesday. Clearly, my beliefs do not affect the weather. So it is spring and it is raining...again. My daughter has spring break next week--what week do you have spring break? We are heading up to Oregon to visit the grandparents, and I bet it rains there as well.


Fortunately, Chef Mary is here and ready to help you out with weeknight meals with the wonderful menu she designed for the first week of April HERE. Hurry on down and pick what days you don't want to cook if you're not off to someplace else for Spring Break.


Now, I know there are times when you need a fast & easy recipe for a meal or a side or for a potluck. While I obviously love cooking, there are times when cooking is not practical, or necessary. This "recipe" requires no cooking, no measuring, and is just three easy ingredients. Sound too good to be true? Well, it's delicious, just try it some time:


ONE MINUTE LENTIL SALAD


Ingredients:

1 package Trader Joe's Steamed Lentils

1 14.5 oz Trader Joe's Bruschetta Sauce

1 6 oz. package crumbled feta cheese (any kind will work)


Open steamed lentils package and break apart the lentil 'brick' and rinse thoroughly in colander or strainer. Place rinsed & drained lentils in large bowl. Add entire 14.5 oz tub of bruschetta sauce & entire tub of 6oz crumbled feta. Mix. Serve.


Yes, it's that simple and it is CRAZY good. Let me know if you try it. If you are looking for a vegan version, you can now buy vegan feta. In the past, I have made vegan feta from blanched almonds--but that takes two days and a lot of fussing, so I won't share that recipe this time.
