GOOD FRIENDS MAKE GREAT FOOD

Hello everybody! Chef Mary here!

Next week I am making a very special Indian feast that I learned to make from my good friend, Vani. We've been friends for over a decade sharing the love of hiking, yoga, and a fun night on the town! Vani introduced me to her Indian traditions and some of her treasured family recipes.

Vani also has a passion for cooking, and is a skilled chef which she does in her spare time from her bigwig job at Apple! She has shared with me some of her favorite popular dishes--and that most importantly includes how to use a variety of Indian spices.

Pro-tip: get your spices at your local Indian market. Both Chef Ginny & I have found that our local Indian markets carry many more spices at reasonable (okay, some ridiculously cheap) prices than any grocery store--even some specialty stores! The most popular spices you use frequently can be had at a fraction of the cost at your "regular" grocery store. Cumin, bay leaf, coriander, chili powder, cinnamon, pepper come in large, incredibly priced options just to name a few that easily cross all our borders! The first time Vani showed me I was stunned at the difference in pricing. You can also get high-quality staples such as lentils, rice and nuts and seeds at prices far cheaper than most anywhere else. Many of the organic options are even cheaper than conventional options at our local stores. Give it a try, you will be so surprised! Believe me, I know!

Through Vani, I have learned that food is not just about nourishment, but also about the culture and tradition. These dishes she taught me to make, you may or may not have tried them of them--and sure I've heard of Butter Chicken--but to learn from my friend and hear her stories of learning when she was young, and how her family celebrated different traditions has been an honor. I am honored to share in her heritage, and to share this wonderful Indian Feast with you! Try traditional Butter Chicken made from a recipe passed down through Vani's family, as well as cholle masala (chickpeas in a tangy gravy or sauce), basmati pulao vegetable rice, and a refreshing raita yogurt dip with naan. I am very proud and humbled to offer this dish to our little supper club.
